Warm Dessert: Bourbon Peach Crisp (For Adults!)

This dessert is fruity, tasty and a warm sweet treat during these cool winter months!


There are 2 special ingredients in this dessert: Bourbon and Vanilla Bean. Bourbon is a type of ingredient that can help bring out the taste - it is a form of alcohol. Don't worry though. If you aren't a big fan of alcohol, the liquor does "cook-off" throughout baking, making it much less strong in the finished product. Vanilla bean is great for baked goods. Vanilla bean is different from vanilla extract. Vanilla bean has an extra sweet test.

Ingredients

  1. 2 lbs peaches

  2. 1/3 c bourbon

  3. 2 T. maple syrup

  4. 1/2 vanilla bean

  5. 1/4 c brown sugar, packed

  6. 1/4 tsp. cinnamon

  7. 2 T. flour

Topping

  1. 1 stick butter

  2. 1/2 vanilla bean

  3. 1/2 c oats

  4. 1/2 c pecans, chopped into small pieces

  5. 3/4 c brown sugar, packed

  6. 2/3 c flour

  7. 1/8 tsp. salt

For Serving

  1. 1 carton vanilla bean ice cream


Directions


How to prepare:

  1. You will preheat the oven to 350 F.

  2. Prepare a med size of cast- iron skillet with oil.

For the filling:

  1. You will cut the peach into 6 slices and you will place them into a large mixing bowl. You will drizzle the bourbon and the maple syrup over the peaches, stir and let it soak as you working on prepare for your dry ingredients.

  2. In another mixing bowl, combine the brown sugar, flour, cinnamon, and vanilla bean seeds (half) by scraped off the pod. When you crush the seeds with other ingredients, it will release a maximum amount of the vanilla flavor.

  3. you will pour the dry ingredients over top of the peaches and toss to evenly coat. You will lay the peaches flat in the prepared skillet beginning on the outside and working up your way to have 2 -3 layers.


For the topping:

  1. You will melt the butter into a small saucepan and scrape the other the half of seeds from the vanilla bean. Next, you will add the scraped of the pod to the butter and simmer for about 3- 5 mins for texture to look infuse. You will set it aside and get rid of the pod.

  2. In another bowl, you will combine the following ingredients: oats, crushed pecans, brown sugar, flour, and salt. You will pour the butter over the mixture and then you will stir to combine it. The texture has to look like small clumps.

  3. You will sprinkle the topping over the peach in about an even layer and you will bake it for 45 mins.

To serve:

Kate's accommodations:

  1. The vanilla bean is the hardest step to do, I would recommend asking for help.

Kate tip:

  1. If you don't have a food chopper, you can buy premade pecans that are already crushed

  2. I don't know if the vanilla extract is a good substitute for the vanilla bean, but you can try it if you are in a pinch. The bean will add a richer flavor.

  3. If you don't have a cast-iron skillet, you may try it in a pie dish.
