How to Make a Killer Blueberry Muffin Loaf with Streusel Topping 😃

This recipe will leave them craving for more of it. I love using fresh blueberries!



Ingredients


For the loaf batter

  1. 1 1/2 C all-purpose flour, + 1 -2 heaping T for blueberries

  2. 3/4 c sugar

  3. 2 tsp. baking powder

  4. 1/2 tsp. salt

  5. 1/2 C (1 stick) unsalted butter, melted

  6. 1/3 c buttermilk or milk

  7. 1 large egg

  8. 1 large egg yolk

  9. 1 tsp. vanilla extract

  10. 2 C fresh blueberries ( it can be frozen-thawed, drained, dried)

For the Streusel Topping

  1. 3 T. very cold unsalted butter, diced

  2. 1/2 c all-purpose flour

  3. 3 T. sugar

Directions

  1. Preheat oven to 350 F. Lightly greases 9x5 loaf pan with nonstick spray.


How to Make the Loaf Batter

  1. In the large mixing bowl, whisk together flour, sugar, baking powder and salt; set aside

  2. In a med mixing bowl whisk milk, eggs, and vanilla. Then, slowly stir in the melted butter.

  3. Pour the wet ingredients into the dry ingredients bowl. Stir the ingredients gently with a rubber spatula.

  4. In a small bowl, you will need to gently toss the heaping flour with the blueberries, until the texture looks like cover all the way. Make sure that you are careful with the blueberry while you fold in. Use a rubber spatula by spread the batter into the pan.

For the Streusel Topping

  1. In the small bowl, combine the 3 streusel toppings together. Rub the ingredients together in the fingers until the texture is evenly crumbly.

Bake

  1. Bake it for 55- 65 mins. until the center comes out clear by using a toothpick. You want the top of the batter to be slightly golden.
