The Best Brownies I've ever Made

This recipe is perfect if you are looking for a chocolaty bite, sweet treat or an easy dessert to make for your family. What I like about this recipe is that it uses a couple of my favorite things:

1. Coconut oil: Helps to create a moist/soft texture

2. Espresso powder: I add this ingredient to the recipe to add flavor. I used 1/2 cup for some extra power, but you can use as much as you would like to taste.

3. Powdered sugar: I love a good presentation


What you Need:

2 C sugar

1 C cocoa powder

1/2 tsp. salt

*eggs

*water

*vanilla extract

(* these ingredient amounts will depend on the size of pan you are making)


TO MAKE A 9X9” PAN OF BROWNIES:

  • Mix 2 cups of Brownie Mix with 1/2 cup melted butter (or you can use vegetable oil, or liquid coconut oil), 2 eggs, 1 teaspoon vanilla extract, and 1 tablespoon water. (If desired, add 1/2 cup of chopped nuts or mini chocolate chips!)

  • Spread in a 9x9” pan that’s been lined with foil and sprayed with cooking spray. Bake at 350°F for about 20-24 minutes, until a toothpick comes out 1” from the edge of the pan with only a few crumbs. Cool before slicing into squares.


TO MAKE A LOAF PAN OF BROWNIES:

  • Mix 1 cup of Brownie Mix with 1/4 cup melted butter (or you can use vegetable oil, or liquid coconut oil), 1 egg, 1/2 teaspoon vanilla extract, and 1 1/2 teaspoons water. (If desired, add 1/4 cup of chopped nuts or mini chocolate chips!)

  • Spread in a loaf pan (4x8 or 9x5) that’s been lined with foil and sprayed with cooking spray. Bake at 350°F for about 12-15 minutes, until a toothpick comes out 1” from the edge of the pan with only a few crumbs. Cool before slicing into squares.


TO MAKE A 9X13-IN PAN:

  • Mix 3 cups mix, 3/4 cup vegetable oil liquid coconut oil, or melted butter, 3 large eggs, 1 teaspoon vanilla extract, 2 tablespoons water. Spread in a 9x13-in pan that’s been lined with foil and sprayed with cooking spray. Bake at 350°F for about 18-22 minutes, until a toothpick comes out 1” from the edge of the pan with only a few crumbs. Cool before slicing into squares.


Kate's Tips:

As I said earlier, I went with some different choices in the brownies because I wanted something a little healthier with a bit of ~jazz~.

1. Coconut oil - If the batter looks dry, add little more water like 1 tsp or tbsp. That should help to make the batter wet

2. Espresso powder - I added it for extra flavor, but you could always add chocolate chips, mint chips or anything else you'd like to add

3. Powdered sugar - I used a sifter to add it to the brownies with a little less mess


Kate's Accommodations

For my peers with disabilities who may have needs in the kitchen, I have some ideas. I used to be scared of the oven and brownies require baking. If you are afraid of heat, or feel like you are going to get burned, that is ok! Here are some of the things I do when using the oven:

1. Always use oven mitts when putting things in or taking things out. It makes you feel like your hands are protected. You can also use silicone heat gloves. They fit on like gloves and can protect your hands in up to 500 degrees of heat.

2. You can use an oven grabber. It allows you to pull the rack out, push the pan in and push the rack back in without having to touch the racks.

3. Ask for help! The oven can be scary, but having an adult or friend to help makes things easier.
