"Thankful for You" - Thanksgiving Treat Tray

Since this year has been ... crazy to say the least, I am feeling extra thankful for my family and friends this season. I like to show my love through baking for other people, and I thought what better way than to share some Thanksgiving spirit by making a treat tray for my family and some of our friends. It's a good mix of salty and sweet - it will be hard to know which treat to eat first!





Recipe 1: Spice Pumpkin Bread


Ingredients:

2 c. flour

1/2 tsp salt

1/2 tsp baking powder

1 tsp baking soda

1 tsp clove

1 tsp cinnamon

1 tsp nutmeg

3/4 c. softened butter

2 c. sugar

2 large eggs

1 15 oz. can of pure pumpkin


Directions:

  1. Whisk the first 7 ingredients together in a small, separate bowl. Set aside.

  2. Preheat oven to 325 degrees. Grease 2 8x4 loaf pans and dust with flour.

  3. In a large bowl, beat butter and sugar on medium until just blended

  4. Add eggs one at a time - beat until fluffy. Then add pumpkin and beat again.

  5. Add dry ingredients into pumpkin mixture and mix on low until combined.

  6. Pour batter into pans and bake for 65-75 minutes or until a toothpick comes out clean.

  7. Cool loaves in pans ~10 minutes, then remove and place on a cooling rack.

Recipe 2: Mini Pecan Pies


Ingredients:

Store-bought pie crust

1/3 c. light corn syrup

1/4 c. brown sugar

1 1/2 tbs melted butter

1 egg lightly beaten

1/2 tsp vanilla extra

1/2 c. chopped pecans


Directions:

  1. Preheat oven to 350 degrees.

  2. Lightly flour the working surface, then roll out the dough in a 12-inch circle.

  3. Using a 3-inch cooking cutter or glass, cut out 12 circles from the dough.

  4. Take each dough circle and press into muffin pan wells - make sure the sides come up the well.

  5. Chill while making the filling.

  6. Mix together syrup, brown sugar, melted butter, egg, and vanilla and combined. Then add in pecans.

  7. Place ~1 tablespoon of filling in each crust without going over the dough edges.

  8. Bake for 25 minutes or until filling is set then cool for 10 minutes. Remove from pans and place on a rack to cool.

Recipe 3: Tasty Seasoned Oyster Crackers


Ingredients:

3/4 c. canola oil

1 package ranch dressing mix

1/2 tsp dried dill weed

1 tsp lemon pepper

1 tsp granulated garlic

1 tsp onion powder

1/2 tsp seasoned salt

1/4 tsp ground white pepper

2 16 oz bags of oyster crackers


Directions:

  1. Preheat oven to 275 degrees.

  2. In a large mixing bowl, mix together oil and all seasonings.

  3. Once combined, toss all crackers in the bowl until well coated.

  4. Spread crackers on a jelly roll pan in a single layer.

  5. Bake until crackers are golden, ~15-20 minutes.

  6. Cool and store.
