Summer Recipe: Lemon Blueberry Muffins with a Lemon Glaze

If you like lemon and you like blueberries, why not do both? This recipe is good, moist, and most importantly, its very easy to make.





Ingredients

The Muffins

  1. 2 C flour

  2. 1 1/2 tsp. baking powder

  3. 1/2 tsp. salt

  4. 1/2 c butter

  5. 1 c sugar

  6. 2 tsp. lemon zest

  7. 2 large eggs

  8. 1 tsp. vanilla extract

  9. 2 T. lemon juice

  10. 1/2 c whole milk

  11. 1 c blueberries ( fresh or frozen)

Lemon Glaze

  1. 1 C powdered sugar

  2. 2 T. fresh lemon juice

Directions

  1. Preheat oven to 350 F. You either lighter spray with nonstick cooking spray or paper muffins liners on muffins tin

  2. In the small bowl, whisk together the following ingredients: flour, baking powder, and salt. Set it aside.

  3. In a microwave-safe bowl or another small bowl( if you have one) combine sugar and lemon glaze. The combing method is that you are using your fingers by rubbing it back and forth until it looks fragrant. This method actually works well. Fragrant means: they are in little pieces

  4. In a stand mixer bowl, you will beat the butter and the bowl that has the sugar and lemon zest together until the texture look likes light and fluffy. Next, you will add the eggs, vanilla, lemon juice, and milk. Mix until its fully combined. Then, you will add the flour mixture and you will mix on low speed until it fully combined. Gently stir in the blueberries.

  5. You will divide the batter into the 12 muffins cup. Its bakes for 23 - 25 mins.

  6. After the timer goes off, remove them from the oven, shut off the oven, and put them on the cooling rack. The cooling rack keeps them to cool off.

  7. When the product is cooling off work on the glaze.

  8. After the product has a cooling rack, spread the glaze on top of the muffins

  9. Enjoy it!
