Magnolia Table Eats - Spinach, Mushroom & Swiss Quiche

Quiche is a family favorite at our house. Some of you may be asking, "what is quiche?". I like to think of it as a tasty egg pie and it's delicious. I was recently given the Magnolia Table cookbook by Joanna Gaines and there are so many tasty things in there, but I could hardly wait to make the quiche!

What you need:

2 T. Butter

1/2 c diced white onion

12 oz baby bella mushroom, trimmed & sliced ( 4 C)

2 c spinach

6 large eggs

1 c heavy cream

1 tsp. Garlic powder

1 tsp. Salt

1 tsp. Ground black pepper

12 oz Swiss cheese (grated)

1 unbaked pie crust or a store-bought 9 inch pie crust


Directions

  1. Preheat oven to 350 F

  2. In a large sauté pan, heat the butter over med heat until melted. Add the onion& sauté until tender, about 6 mins. Add the mushrooms, about 5-6 mins. Add the spinach and sauté until wilted, about 1-2 mins. Remove from the heat & set aside.

  3. In a large bowl, whisk together: eggs, cream, garlic powder, salt & pepper. Stir in spinach, mushrooms, onions & Swiss cheese. Pour the mixture into an unbaked pie crust.

  4. Bake until the quiche is lightly golden & set in the center about 45 mins. If the crust is browning too quickly, cover it with foil to prevent it from burning

  5. Remove from the oven & let stand for 5 -10 mins before serving. Cut and serve.


Kate's Tips: 1. For a lighter option, you can use half and half creamer instead of heavy whipping cream.

2. We did not have Swiss cheese at our house, so I used Sharp White Cheddar instead. Just as delicious!


Accommodations:

  1. Chopping - This recipe uses a lot of chopping and I know for some new to cooking, working with knives can be scary. I personally get nervous cutting small pieces, so when it is possible, I use an electric chopper. For this recipe, I used the chopper for both my onions and to make my mushrooms a bit smaller.
