If you are looking for a snack, something to dip in your coffee or a midnight snack - I have just the thing for you. Homemade gingersnaps. This recipe makes a soft and chewy cookie, and is super easy to make.

What is the top-secret ingredient in this recipe? The answer is molasses.

If you don't know what molasses is, it is type of sweetener that forms a dark brown sugar from raw sugar. It is used commonly in baking.

This recipe is from one of my friend's grandmother's cookbooks.

Ingredients

The wet ingredients:

  • 3/4 C shortening or butter

  • 1/2 c sugar

  • 1/2 c brown sugar

  • 1/4 c molasses

  • 1 egg

The dry ingredients:

  • 2 C all-purpose flour

  • 1 tsp. baking soda

  • 1 tsp. cinnamon

  • 1/2 tsp. cloves - it type of spices

  • 1/2 tsp. ginger ( ground ginger the spices)

  • 1/2 tsp. salt

Directions

1. In a large bowl, you will cream the shortening or butter, sugar, and brown sugar. Add the molasses and egg, and beats well Cream means in baking terms is that you are beating the butter and the sugar together until the texture is light and creamy. Beat means stir it together with a force or using a spoon or whisk.

2. In a separate bowl, you will combine the dry ingredients.

3. You will add the dry mixture into the molasses mixture, and blend well.

4. Before you bake the cookies, you will chill the dough in the fridge for 1 hr.

5. While you are waiting, you can preheat the oven to 375 F.

6. After the timer is over, you can shape the dough into small balls and roll into sugar.

7. Bake for 9 mins
