Adult Treats - Bailey's Irish Cream Cookies

This recipe is for anyone who likes Bailey Irish in general! If anyone likes chocolate and Bailey then I have a perfect recipe for you.





Ingredients

  1. 2 1/2 C all-purpose flour

  2. 3/4 tsp. salt

  3. 1 tsp. baking soda

  4. 1/2 tsp. ground cinnamon

  5. 1 1/2 tsp. espresso powder

  6. 8 oz of butter, at room temperature - that is 2 sticks

  7. 1 C dark brown sugar, packed

  8. 1/2 C sugar

  9. 1 1/2 tsp. vanilla extract

  10. 3 T. Bailey Irish Cream Liqueur

  11. 2 large egg, at room temperature

  12. 12 oz semi-sweet chocolate chips - that will be 2 C


Instructions

  1. In a large bowl, you will combine - flour, salt, baking soda, cinnamon, and espresso powder; whisk until it well combined and set it aside.

  2. In an electric stand mixer with a fitted paddle attachment, you will combine the butter, brown sugar, and sugar by beating it on the med-speed until the texture is light and fluffy. If needed, scrap the sides of the bowl to the bottom. Return back to the med- speed for 2 mins.

  3. Add in the next ingredients: vanilla extract and Bailey Irish cream, and you will need to beat until it is very combined

  4. You have put an egg in one at a time, and beat it for 15 sec for each egg. After, you will have to turn off the mixer. By using a rubber spatula, gently fold in the flour mixture. You will stop fold in once you have noticed the flour is all gone. Now, you will fold in the chocolate chips.

  5. You have 2 choices - they are no wrong choices. You can do either a or b: a) you can cover the bowl and chill the batter for 2 hours before baking, or b) bake it right away.


When you're preparing to bake the cookies

  1. Preheat the oven to 375 F. You need to line 2 large baking sheets with parchment paper, set them aside.

  2. If you have a cookie scooper that will be easier, if not then you roll the dough into a ball using your palms. You will put the cookie balls into both sheets.

  3. Put the cookie sheet into the oven one at a time. Bake for about 10-12 mins. The quality final picture has to be brown in the edges and soft in the middle. Before transferring the cookies to the wire rack to cool off, let the cookie sit on the cookie sheet for 15 mins.

Kate's Tips

  1. When you are rolling the dough into the palm, I would say do not press hard because if you do the dough can be warm. I would press gently.

Kate's Accommodations

1. Raise your hands if you are afraid that you might burn your hands? I know oven mitts can be the only answer to prevent it. I have the easiest solution for you: use an oven grabber stick.
