This recipe is great for the summer! When I made this recipe, I got help from a parent to use alcohol so I didn't make it too boozy. While alcohol loses strength when cooked, some people don't like a strong tasting recipe. That is why working with alcohol in recipes usually requires small amounts. I thought after the pie was made and froze, it would lose some of that boozy taste. Oh man, I thought wrong! The following day after the pie was in the freeze overnight you could still taste the margarita. What a sweet and tasty treat!
If you are alcohol-free, or you just don't like alcohol, there is non-alcohol version non alcohol Margarita Pie
Ingredients for the crusts:
2 1/2 c pretzels
4 graham crackers
6 T. melted butter
1/4 c. sugar
For the filling:
1 can sweeten condensed milk
1/4 c. tequila
1/4 c. lime juice
2 T. triple sec ( it is a type of alcohol liqueur)
Pinch of salt
8 oz. cool whip, defrosted
Zest of 1 lime + more for garnish
Small lime wedges for garnish
Directions
Crust: In a large food processor, combine the pretzels and graham crackers. If you have the smaller version, chop items one at a time, then combine. Pulse to make fine crumbs.
Transfer the crumbs into a large bowl then stir in melted butter ( about 1 min and 30 secs in the microwave) and sugar. The texture should feel like wet sand.
Grease a 9" pie plate with cooking spray, and then press the crust mixture into the dish.
Filling: In a large bowl, whisk together sweetened condensed milk, tequila, lime juice, triple sec, and salt until evenly combined. Fold in the cool whip and lime zest until just combined.
After you are done making the filling, pour the filling into the prepared crust. Sprinkle more lime zest on top and garnish with the small lime wedges.
Freeze until firm, for 4 hrs. Serve cold.
Kate's Tip
If you are going to make the pie the next following day, you should do 2 things: Place cool whip in the fridge the night before making so it can defrost is in the fridge that is the faster way to defrost and make sure you have the appropriate alcohols if you chose to use them.
