How to Funky (in a good way) Chocolate Chocolate Chip Banana Bread

This recipe is a) super tasty, b) uses vegan ingredients and c) super easy to make! Yes - this banana bread uses vegan substitutes that add a funky (in a good way) flavor. While it does call for using an egg, those of you who don't eat eggs can always substitute for the flax egg.




Ingredients:

The dry ingredients

  1. 1 C white whole wheat flour

  2. 1/2 c coconut sugar

  3. 3/4 c cocoa powder

  4. 1 tsp. baking soda

  5. 1/8 tsp. salt

  6. 1/2 c chocolate chips ( + chips for the top of bread)

Wet

  1. 2 large eggs, beaten

  2. 3 med. bananas, mashed

  3. 2 tsp. vanilla extract

  4. 1/4 c coconut oil, melted


Directions

  1. Preheat the oven to 350 F + spray the bread pan with nonstick cooking spray. Set aside.

  2. Mix the dry ingredients together (except for the chocolate chips) in a med- size bowl. Set it aside.

  3. In a different separate bowl ( will be the wet ingredients and combine it well), and you will mash the bananas with the fork on the plate. Then you will combine the bananas with the wet ingredients.

  4. slowly add dry ingredients to wet while stirring. Then you will fold the chocolate chips into the batter, and mix again.

  5. you will pour the batter into the bread pan that has already been greased. The fun part is that you will sprinkle some chocolate chips on top of the bread.

  6. Bake for 45- 50 mins.

Kate tips:

Always make sure the batter comes out clear after you bake it. If it doesn't come out clear with a toothpick or knife, then bake it another 3-5 mins. You will keep doing this until it comes out clean. When it comes out clear then put it on a cooling rack and shut off the oven.
