Egg Scramble Muffins for Breakfast

When you are looking for a healthy, protein-filled breakfast to start your day - eggs are always a tasty and easy way to go. If you find yourself in a pinch and you need to grab breakfast and go, you can pack these muffins to-go. It's always important to start your day with (tasty) protein!



Ingredients

  1. 1/2 lb. bulk pork sausage

  2. 12 large eggs

  3. 1/2 c chopped onion

  4. 1/2 C chopped green bell pepper, or to taste

  5. 1/2 tsp. salt

  6. 1/4 tsp. ground black pepper

  7. 1/4 tsp. garlic powder

  8. 1/2 C shredded Cheddar cheese

Directions

  1. Preheat oven to 350 F. You can either lightly grease 12 muffins cups with nonstick cooking spray or line with paper muffins liners.

  2. You will heat a large skillet over med-high heat and stir in sausage. Cook and stir until the texture of the sausages are crumbly, evenly browned, and no longer pink. It will cook for 10- 15 mins; drain.

  3. In a large bowl, you will beat eggs. Then you will stir in onion, green pepper, salt, pepper, and garlic powder. Last, you will mix in the sausage and the cheddar cheese

  4. Bake in the preheated oven until you use a knife inserted near the center comes out clear, and you will bake it for 20 - 25 mins.

Kate Tips

  1. If you are using the nonstick spray: here is a little tip for you that I have learned

    1. The egg bakes better with the nonstick cooking spray instead of using muffin liners

    2. After the timer goes and you check it with the knives/ toothpick, make sure it comes out clean.
