Chocolate Chip Cookie Cake

Have you ever wished that you could have a special dessert for special occasions? Something simple and easy with no fuss? Never fear! I have got the perfect recipe for you and it's the Chocolate chip cookie cake! I believe that you are going to enjoy it



Ingredients:


For the Cookie Cake

  1. 1/2 c butter, cut into 1-in cubes, plus more for the pan

  2. 1 2/3 c all-purpose flour

  3. 1/2 tsp. baking powder

  4. 1/2 tsp. baking soda

  5. 1 tsp. salt

  6. 3/4 c light brown sugar

  7. 1/4 c sugar

  8. 1 lrg. egg

  9. 2 tsp. vanilla extract

  10. 1 1/4 c semisweet chocolate chips

Cookie Cake Icing

  1. 4T. unsalted butter

  2. 1 C powdered sugar, sifted

  3. 1 1/2 tsp. whole milk

  4. 1/4 tsp. vanilla extract

  5. pinch of salt

  6. food coloring ( based on your preferences)

Cookie Cake

  1. How to melt the butter: On the big heavy saucepan, melt the butter on very low heat for 10 mins. If you stir the butter regularly, and it should prevent the butter from getting too hot, sizzle, crackle, and pop.

  2. How to prep for the oven and the pan: Meanwhile when the butter is melting, preheat the oven to 350 F. Put a little bit of butter into the pan, use your hands to gradually greasing the bottom and the sides on the 10 -in cast -iron skillet.

  3. For the best part - how to make the cookie dough: In a med mixing bowl, you will whisk the ingredients from flour to salt. In the stand mixer with the paddle attachment, combine both of the sugars. After the butter has fully melted completely, gently pour it over the sugar mixture from the stand mixer bowl and beat on the low settings until the texture is fully combined. Add the eggs and the vanilla extract and you will beat until the texture of the mixture is combined. If you need to scrape down to the bottom and sides of the bowl by using a rubber spatula. While the mixer is going on the low settings, gently by gradually by adding the dry ingredients by beat and the mixture is fully combined. Repeat the step by using the rubber spatula to scrape sides to the bottom, and beat the mixture on low for 30 sec. Up to speed to med-low, add the chocolate chips, and beat until the chocolate chips are mixed in, for 1 min. Put the cookie dough into the pan, by scraping by doing a small portion at a time by using your hands by pressing down into the skillet. Start from the bottom to the top.

  4. Bake the cookie cake: Bake the cookie cake in the oven for 20-22 mins. The texture we looking for is to the edges are set well done and are still " gooey, in a good way". Cool the product on the wire rack completely before the start the frosting part.


How to Make the Frosting:

  1. Making the Frosting: In the stand mixing bowl with the fitted paddle attachment, and beat the butter on med-low settings until it looks smooth and creamy. Reduce the speed to low on the mixer and add the powdered sugar by 1/4 c at a time, and also beat until it fully combined. Scrape down from the sides to the bowl by using a rubber spatula. You will add the milk, vanilla, and salt by doing it all at once, and beat on the low setting. Repeat the step of doing scrape the bowl. The mixture needs to be beaten on the med-high until the frosting looks creamy and smooth for 2 -3 mins.

  2. Decorate the Cake: Put the frosting into the piping bag fitted by scraping it and use a piping tip of your choice. For the 1st round after the frosting is made it will be smooth, but over time when it sits, it comes hard. You can put the leftover frosting into a container with a lid and put it into the fridge. The next you want to use it it needs to be at room temp. and beat on med-high for 2-3 mins in a stand mixer bowl with a paddle attachment

You can get the cast iron pan at the store, and I feel the pan will be your best choice to get.


Kate's Tips

  1. You can use frosting from the store to make it easy.

  2. If you don't have a cast-iron pan, you can buy one from the store if you would like.

  3. When you are putting frosting into the bag, put half of it in and close it by using your hand until you cant see the opening of the piping bag

  4. What I have learned when you are designing the cake - it okay to mess up.
