If you are looking for blueberry or zucchini in treat form, you should try this bread. It is moist, sweet, and makes for a tasty breakfast treat!
Steps:
1. Combined the wet ingredients together
2. Combine all dry ingredients.
3. Whisk all dry ingredients - it should look fully mixed.
4. Grate the zucchini by using a hand grater. Every grater has different sizes and texture. To get the right texture for the bread, I suggest using the smaller holes on the grater.
5. Combine the zucchini into the dry and mix it.
6. Combine blueberries and 1/4 C flour together: toss it.
7. Add wet and blueberries to dry. Bake.
Ingredients
1/2 c light brown sugar
1/4 c sugar
1/3 c veg. oil
1/4 c greek yogurt
1tsp.vanilla
1C flour + 1/4 c
1/2 tsp. baking powder
1/2. tsp. baking soda
1/4 tsp. salt
1 zucchini, grated
1 C blueberries + some for topping
Directions
Preheat oven to 350 F
Lightly greased 9X5 loaf pan with Crisco
Mix all wet ingredients together
Mix the dry together
Mix grated zucchini into dry
Combine blueberries w/ 1/4 C flour and toss
Add wet and blueberries to dry
Pour the mixture into the loaf pan and spread it out
Put some blueberries on the top
Bake it for 55- 60 mins

Kate's Tips:
I like to use fresh blueberries as they add so much extra flavor. If you don't have fresh blueberries, frozen would be fine. Make sure that you thaw out your blueberries before using them for baking. This allows any water to drain off/out of the berries so it does not make your bread wet or sticky when baking.
